Crockpot Cheese Tortellini

I was looking for easy and yummy meals so that I could keep up with my cooking as the school year began.  I tried this one out the other day.  It was delicious and made A LOT!

Crockpot Cheese Tortellini

Ingredients:
1 (19oz) bag of frozen cheese tortellini (I couldn't find frozen, so I used boxed cheese tortellini)
1 small bag of fresh spinach (I used about half of a 5 oz package, but more is better!)
2 (14.5 oz) cans of Italian style diced tomatoes, drained
1 block (8 oz) of cream cheese or neufchatel (less fat)
1 lb. of ground sausage or chicken/turkey sausage browned
4 cups of chicken broth 

Brown the sausage and put all ingredients in crockpot,
chunking up the cream cheese.
Cook on low for 4-6 hrs.

Serves 4-6

Soft Shell Chicken Tacos

One of my mom's sweet friends saw these on their local news and tried them out. The prep work is SO easy and its a crockpot meal, so it saves you the time of being there for the cooking part.

Grant's soft shell chicken tacos

5 to 6 chicken breasts

2 cans of cream of chicken soup

16 oz of salsa

Cumin

Shredded lettuce

Sour cream

Pico de Gallo

Shredded pepper jack cheese

Flour tortillas

In a crock pot, put your chicken breasts in and sprinkle generously with cumin. Then place your salsa and cream of chick soup over the chicken. Cook on low for 8 hours or until the chicken is fork tender. Once the chicken is cooked, take a fork and shred the chicken on the crock pot and blend well with the sauces.

We still had some of the salsa and guac left over from the Roasted Chicken Wraps and I also served it with some chopped onions, shredded cheese and sour cream. YUM!

To Die for Crock Pot Roast

This is a super easy crock pot recipe and oh so good. Probably one of my favorite roast recipes that I've ever had.

To Die for Crock Pot Roast

Ingredients

    • 1 (4 -5 lb) beef roast, any kind
    • 1 (1 1/4 ounce) packages brown gravy mix, dry
    • 1 (1 1/4 ounce) packages dried Italian salad dressing mix
    • 1 (1 1/4 ounce) packages ranch dressing mix, dry
    • 1/2 cup water ( I honestly probably added around 1 cup)
    • I added half of an onion cut into fairly large pieces, some russet potatoes and carrots

Directions

  1. Place beef roast in crock pot.
  2. Mix the dried mixes together in a bowl and sprinkle over the roast. (I added the veggies at this point)
  3. Pour the water around the roast.
  4. Cook on low for 7-9 hours.
